Two for One: Beet Speckled Cake & Ham and Cheese Muffins

 Another great cookbook jumped off the shelf and into my arms at the library recently.  This one is called Great Gluten Free Baking by Louise Blair.  Can you guess where she's from by her name?  She's a food stylist and home economist in the United Kingdom.  Her gluten free cookbook is just FULL of wonderful recipes; sweet to savory, breads, scones, biscuits, and some elegant, but not too difficult desserts.          
  We've tried two of them over the last couple of weeks - Speckled Beet Cake was the first.  It seemed like a fun way to use the beets we've been getting at the farm. (And an excellent way to get them eaten by all family members.)
The batter turns a beautiful hot pink with the folding in of the grated beets.  The recipe said to bake it in a deep 8 or 9 inch round cake pan, but since my round cake pans are rather shallow, we opted for a bundt pan. It turned out fine, but I'd be interested to see the difference had we had the proper pan.  The kids were a bit reluctant to try it, but since Kayla helped with the whole process, she went first and assured her brothers it was good.  And it WAS good, but if I were you I'd arrange to not have any other dessert-type items around (especially those involving chocolate) when you serve this cake.  If it is the only sugar filled option in your house, it is sure to get eaten!  :) 

Beet Speckled Cake
1 3/4 sticks butter
1 cup brown sugar
2-3 beets, peeled and grated
1 1/4 cup nuts (walnuts, pecans, or mixed nuts.  We omitted the nuts.) 
3 eggs, separated
1 tsp baking powder
1/2 tsp cinnamon
grated rind and juice of one orange
1 1/4 cup rice flour
3 Tbsp ground almonds (I used Trader Joe's Almond Meal)

(We also went without icing, and it was great.  With icing it should be wonderful!)
1 cup cream cheese
1 Tbsp powdered sugar
1 cup nuts (this could be optional)

Cream butter and sugar.  Stir in beets, nuts, and egg yolks.  In a separate bowl mix together rice flour, ground almonds, baking powder, cinnamon, orange rind, orange juice.  Add to butter/beet mixture and beat until smooth.  Beat egg whites until stiff peaks form.  Fold egg whites into batter.  Bake at 400 degrees for 40-50 minutes.  Cool.  Beat cream cheese, powdered sugar and spread onto cooled cake.  Decorate with nuts if desired.                                                                                                                                                    

   The other recipe we tried this week was Cheese, Corn, and Bacon Snack Muffins.  Cooper had his first day of Classical Conversations on Tuesday, so we considered it the first day of school for the whole family, and I made a special breakfast that included mocha smoothies and these muffins.  These are great for breakfast or for mid-morning/late-afternoon snacks - which are a very regular occurrence in my house! They are just the perfect combination of protein and carbs, it seems.

Cheese, Corn, & Bacon Snack Muffins
2/3 cup brown rice flour
1/3 cup corn flour
2/3 cup polenta
(I just used 1 cup corn meal in place of the flour and polenta)
2 tsp baking powder
1 tsp xanthan gum
2 eggs
6 Tbsp butter
1 cup buttermilk (or the vinegar in milk trick)
1/3 cup corn kernals (I used frozen)
2 Tbsp grated parmesan cheese
2 oz Canadian bacon (I fried mine a bit beforehand)
pinch salt
3 1/2 oz. cheddar cheese - cut into 12 cubes
(I used thick cut slices of colby/jack)

Combine all dry ingredients in mixing bowl.  Cream eggs, butter, and buttermilk in separate bowl.  Add liquid ingredients to dry ones and stir to combine.  Add corn, bacon, parmesan cheese, and salt -  mix well.  Fill muffin tin cups with a spoonful (fill cup 1/2 full) of batter.  Place cheese cube on top, and cover with remaining batter.  Bake for 20 minutes and 350 degrees.

I doubled this recipe with no trouble, and we've been snacking on these all week - or using them as a side for dinner or lunch meals.

Eat, Pray, Love - My Take (My Very Long Take)

(Since I had just finished reading the book, and had no idea there was an upcoming movie, it felt like the movie was made just for my personal entertainment - literally two weeks after finishing the book! My kids, of course, knew there was a movie coming out. "Silly Mom, let me show you the trailer..." Oh! And I have to agree with my friend Megan who said the book is, of course, "infinitely better than the movie." Honestly, I don't think I would have even enjoyed the movie had I not read the book.)

Elizabeth Gilbert is not a Christian, and it was refreshing to discover in her book Eat, Pray, Love that she knows it:

"And while I do love that great teacher of peace who was called Jesus, and while I do reserve the right to ask myself in certain trying situations what indeed he would do, I can't swallow that one fixed rule of Christianity insisting that Christ is the only way to God." p. 14

I say "refreshing," because it is frustrating when a person insists they are a Christian, but they refuse to accept this and other very fundamental principles of the Christian faith. And just in case you're wondering where that fundamental belief comes from, here's a start...

Jesus said to him, "I am the way, and the truth, and the life; no one comes to the Father but through Me. John 14:6

I was thankful for this disclaimer of sorts at the beginning of her book, because it enabled me to continue through the pages and simply enjoy hearing about and learning from her experiences without the anxiety that accompanies a misrepresentation of your faith.

(And now my own disclaimer: This is in no way a complete review of this book - just my own thoughts about and take on a few parts that stood out to me personally.)

Spiral Sermon Interpretation

Kayla, my ten year old, and I have a little spiral notebook tug-of war going on especially on Sunday mornings. I always have a small spiral notebook in my purse - mostly for my menu planning and grocery lists, but also for those occasions when I need to jot down a phone number or email or note to myself. Well, I end up buying these little spirals OFTEN because a little girl who sits next to me at church every week inevitably takes it out of my purse and proceeds to draw pictures. Lots of pictures on lots of pages. Recently, I decided to buy her her own spiral notebook complete with adorable puppy dogs on the front just for the purpose of Sunday-drawing-while-Daddy-is-preaching. Guess how many times we've remembered to bring it to church? Yeah...about twice out of the last 6 weeks.

So, yesterday was no different. She reached down into my purse for the notebook and a pen and began to think about what to draw. She even asked me for ideas. I suggested the beach, since we just got back from Maine. But when I glanced down awhile later, this is what I saw, and I knew immediately what she was drawing, which was a MUCH better idea than my beach idea. (And by the way, she doesn't always draw stick figures at age ten - in case you were wondering. She's actually a pretty good artist!)

Our sermon series this summer has been called "The Question of Jesus." We've covered topics like the Truth of Jesus, the severity of Jesus, the suffering of Jesus, and yesterday's topic was the power of Jesus. Robert was talking about the ascension of Jesus and Jesus' encouragement to the disciples that after He leaves the Holy Spirit would come - and come in much power.

The disciples, of course, thought (hoped) that He meant power to reinstate Israel and dominate the Romans, but Jesus was talking about a power and mission much grander than that. He was talking about being witnesses for Him - doing even greater things than Him - locally and to the ends of the earth. Jesus was saying that those 500 people would be the catalysts for a worldwide movement - and they didn't even know what "ends of the earth" entailed.

From the time of the ascension and the first 500 believers, this movement grew to 20 million strong in a relatively short amount of time with Constantine finally making it the official religion of the Roman Empire. And now, all these years later that same movement has reached even into Amherst, MA - which almost anyone would admit is miraculous.

It began with 500 people in Jerusalem, and it spread to Judea, Samaria, and to the literal ends of the earth.

This is Kayla's interpretation of that. One neighbor telling another. That neighbor telling a friend and so on, which is how her Daddy kept describing as the process by which the mission was and is accomplished - those friends and neighbors all empowered to do such witnessing through the Holy Spirit who is available to all believers at all times.

Saturday Love, Veggie Love, Cindy Love

Yesterday was a gorgeous here - about 75 degrees, clear and sunny. (Sorry Texas, Oklahoma, & California.) Robert decided to join me in an early trip to the farm to pick up our weekly share. Good thing he did, or else I would have been there twice as long picking beans. Most things are already picked for you, but some things are PYO. (Pick your own) So....we picked raspberries, cherry tomatoes, cilantro, basil, and BEANS. There were so many beans that you could pick extra and buy them for a bulk rate. We picked exactly three extra pounds for $3. And they were beautiful! Green, purple, and cream and purple swirled. (Don't know their real scientific names, so I'm making them up.) Also in our share were...onions, corn, tomatoes, carrots, bell peppers, yellow squash, zucchini, arugula, Swiss chard, green onions, cucumbers, a gigantic watermelon, and a cantaloupe.

After that we headed downtown for some browsing through our town's weekly farmer's market. The only things we bought there were three garlic bulbs, a quart of jalapenos, and get this....some fresh ginger! ($16 per pound! Look in front of the tomatoes.) Oh, and one very gluten-ful pecan sticky bun for the only gluten-eater in our family. Usually, while eating some glutinous goodness, he will say something like..."This is really terrible. Just awful - you are not missing anything." Which is always a lie, of course - to ease my jealousy, but after devouring this treat, he admitted it was the best sticky bun he had ever eaten. I didn't mind at all, especially since I was able to indulge in a grass-fed-cow's milk yogurt and peach smoothie while cruising through all of the absolutely beautiful vegetable displays. (Yes, made fresh, on the spot.)
I was in such veggie heaven, so mesmerized by the colors of our haul, that I carried it all out to our backyard, arranged it all on the picnic table and proceeded with a fruit and veggie photo shoot! I am not sure what this says about me, but it made me very happy.

And then we got busy washing, chopping, and eating!

Kayla had her friend Maddie over, and since the weather couldn't have been more perfect, Robert worked on a campfire out back, (while simultaneously polishing off his sermon on the laptop) so that we could have campfire meals or "Hobo Meals" which is what we always call them. (Pretty sure I obtained that term from my Girl Scout camping days.)

The kids and parents all loaded up a foil packet with ground beef patties, potatoes, carrots, beans, and squash, lots of butter, and salt and pepper. (Actually, some packets were mysteriously void of squash and beans.) Then we buttered up some corn and wrapped it in its own packet. Onto the coals it all went, and 15-20 minutes later everyone had their own personal meal. Dessert? Roasted marshmallows, of course. Delicious!

We had to get started on this project a bit earlier than our usual dinners, because we had a very special show to attend that evening. Cindy, our beloved church worship leader and friend, was playing at a local cafe. Everyone in Krum family was looking forward to getting a special drink (steamers, root beer, iced tea, americanos - the works!) and hanging out with church friends and listening to Cindy. Yes, we hear her every Sunday morning, but you really can't ever get enough of this talented lady.

Seriously, I want to give a disclaimer at church each week: Warning! This church has unusually talented musicians. PLEASE do not expect this same level of expertise in other congregations. You are sure to be disappointed.
Familiar worship songs, to James Taylor, to Taylor Swift : ) - she covered it all - and even a few originals. Other friends and worship leaders, Eric and Lois, and even Cindy's housemate, Kate, joined her for some of the songs. All so gifted....
She played to a full house, (who's surprised?) and was her usual fun, easy-going, talented self. It was a fun and memorable time for all - thanks, Cindy!

Wonderful day of fun and favorite things.... a needed encouragement.

Speaking of Kale...

Evidently there are some strong opinions about kale out there. When I posted on Facebook that my children accused me of child abuse when I served it with dinner, some sent their sympathies - to the kids, that is, while others sent the health benefits and their favorite recipes! My favorite responses were Missy's..." I say make 'em eat more!" and Jenny's...." I thought kale was a garnish. You mean you are supposed to EAT it?"

I've already posted one kale recipe this summer that even the kids could admit was tasty. (It has sauteed pepperoni and honey in it, so what's not to like?) I've also been putting a lot of the kale I get from the farm on a weekly basis in smoothies. But here is another fun and tasty way to get this superfood into your diet: Kale Pesto!

It really doesn't taste too much different from basil pesto, and it comes out an even more rich and beautiful GREEN!

Kale Pesto


¼- ½ cup chopped walnuts
1 ½ -2 teaspoons salt
½ pound kale, stems removed, coarsely chopped (1 medium bunch should do)
2 cloves garlic, minced
½ cup olive oil
½ cup grated Parmigiano-Reggiano
ground black pepper to taste

Place all ingredients in a food processor and blend well. Toss with pasta or use as a spread or pizza topper! Freeze in ice cube trays if you can't use it all at once.

*I did not cook the kale at all, but you can steam it until tender before blending with other ingredients if you prefer. You can also toast the walnuts. That is what the original recipe, which came from a Washington Post food column, called for.

Taming of the Shrew

That was what I was close to becoming after borrowing a tiller, raking some manure-enhanced soil into the ground, buying and carefully planting lots of vegetable starts, and erecting the garden fence, only to find a few days later that everything had been chewed down to nubs by some critter. Infuriating!

I was pretty sure it wasn't the groundhog family. (Yes, Mommy, Daddy, and 5 - count 'em 5 - kids!) I never found any tunnels dug under the fence, and they've become so bold now that they freely range in the backyard. They never go near the garden. But one day one of them got close, so I ran out with my apron on and spatula in hand to scare them off. (So scary!) They all scattered except one who not only stood his ground, but actually lunged for me - hissing! (The rebel of the family? Defiant 5 year old?) I threw pine cones and then rocks. He was unfazed. When he continued to lunge at me, I was the one who scattered - back to the kitchen window lookout! How DARE he!?!

Beware the shrew.

After discussing my garden critter woes with my friend Aimee, she told me that she had been trapping voles in her garden: 5 gallon bucket+water+birdseed+wooden plank from the ground to the tip of the bucket= lots of drowned voles! My only efforts to thwart my critters had involved hanging strips of vinegar-soaked strips of cloth on the garden fence.
But by then I had given up. I let the weeds take over. For several weeks.

And then sometime last month I noticed a few things that looked suspiciously NOT like weeds, so I went out to investigate. There were tomatoes growing on the ground, the basil was getting full and taller, three rows of zinnias were trying to make their way up through the jungle, and there were a few vine-y looking things with huge leaves and squash-like blossoms.

I couldn't help but think of the parable of the sower that Jesus tells - the struggling plants being choked out by the worldly weeds, as I went out to try and give them some growing room. I staked and caged the poor tomatoes, and pulled (and even cut with scissors) the mass of weeds that surrounded some of the survivors.
So, not all was lost. And who can remain a shrew at the sight of these sweet little zinnias, or while picking basil for pesto, or watching tomatoes go from green to bright red?
One morning this week, I went out to feed the dog and check on the rest of the livestock :), and I jumped as I approached Buddy's water bowl. Was that a mouse floating there lifeless and slate gray? No. This creature had longer legs, a shorter tail, and an elongated snout! Then I remembered Aimee's voles. Must be a vole - drowned in a bowl - and I didn't even try. I called the kids out to see the fate of our garden thief - or at least one of them. Ha! Ha! Ha! I've got you now you little vole, you, and I will get even MORE of you next summer with my 5 gallon bucket traps. (hear the shrew-like tone)

And then this morning, I opened up my computer wanting to post these photos of semi-garden success, and decided to do a little research on voles at the same time. The photos and descriptions were not matching up to the thing I saw floating in the water bowl.


So, I Google "small critter with elongated nose."

Just guess. A SHREW!
And it turns out they eat 3-4 times their bodyweight per day.

Not next year. Not in my yard.

But I won't be trying to scare them off with my flying spatula either after what I learned from

"Whatever you do, don't try to catch a shrew yourself. They are vicious and aggressive when angered. These feisty little creatures will not be afraid to take a chunk out of your hand with their sharp teeth. Some shrews even have toxins in their saliva."

Turns out I need some coyote or fox urine.

Wonder if that would have helped this aggressive, toxic shrew before wise Petruchio came around?

And, in conclusion, she shall watch all night,
And, if she chance to nod, I'll rail and brawl,
And with the clamor keep her still awake.
This is the way to kill a wife with kindness.
And thus I'll curb her mad and headstrong humor.
He that knows better how to tame a shrew,
Now let him speak; 'tis charity to shew."


Conclusion: Shrews can make a shrew out of ignorant gardeners. (and even informed ones.)

The Maine Event Part 2: Family Beach Vacation!

I was going to write "it never ceases to amaze me that we vacation in Maine every summer," but then I looked back at previous "Maine posts" and realized that I write that same phrase almost every year after we return from Maine. But it's true. I am amazed.

And like a good parent, I am sure to remind my children each year just how blessed they are to live in such a beautiful part of the country and not have to dodge jellyfish and tar on the beach like I did growing up going to the less-than-lovely Texas coast. (Better shells in Texas, though!)

The kids could hardly wait to join us in Ogunquit after our three nights alone in Bar Harbor. Lois drove them up to meet us, (and took them out for ice cream, because we were really late in arriving!) and they were super excited to engage in all of our traditional Ogunquit, Maine activities....
Purchasing bagfuls of various forms of sugar from the "penny candy" store and then going a few doors down for ice cream. And drinking cream soda with lunch at the beach. Yes, vacation = more sugar than my kids probably eat in a whole year.
Talking at least one parent (guess which one?) into actually ENTERING the water.

(And this would be another way the Texas cost gains some points over the north Atlantic coast: you can actually enter the water without suffering from hypothermia in a matter of seconds. Honestly, it HURTS to just stick your feet in.)
Lots of hole-digging and sand castle building and erecting sand walls or deeper moats to try and protect your just completed creation from the incoming tide.

The Maine Event Part 1: Anniversary Trip

You probably guessed that we spent last week in the beautiful state of Maine. I remember looking at U.S. maps at school growing up and thinking of Maine as being such remote, and foreign land. And I guess it sort of it, unless you live in Massachusetts or New Hampshire, and even then a lot of folks wouldn't think of driving the 3 - 8 hours it might take to reach one of Maine's beautiful coastal cities. That's because they are not from a state in which you could possibly drive 15 hours in one direction and never leave the state!

However...the native Texans and perpetual tourists are always up for a road trip.
6 hours? That's just to Dallas and back. Easy day trip.

Robert had planned this trip to Bar Harbor, ME in the early spring as a way for us to celebrate our 18th wedding anniversary. We stayed at a lovely bed and breakfast - possibly one of the nicest in the area. The innkeepers there - Jeff and Catherine, blessed us beyond measure with their hospitality. They have thought of every imaginable detail down to pre-programmed GPS's to several more difficult but local destinations available for guests to take and use at their convenience. There were two choices for breakfast each morning, afternoon tea at 4pm, and they even made me some gluten free pancakes on our final morning there.

The Primrose Inn is not only a business for them, but also a ministry. They actually advertise on their website that they would like for pastors and wives, and others in ministry to come and stay there for a very special discount. This, coupled with their friendliness and attention to every possible need or want, made for a very special gift to us.
Bar Harbor is also the home to Acadia National Park, which is a very spectacular place - mountains, forests, beach, and ocean all in one! In each room at the B&B there was an audio CD that you could pop into your car player for a driving tour of the park. We did that first thing Sunday morning, stopping at almost every location to hike a bit or enjoy the view. Part of the reason Robert chose Bar Harbor and Acadia was because he had been here before on a special father-son camping trip for Kory's 13th birthday. He was mesmerized by the beauty of the place and could not wait to show it all to me.
*A little break from topic here to show you some other sights that are beautiful to me in recent years - restaurants catering to those with a gluten intolerance! Above is a lobster omelet and spicy home-fries. (You really can't go to Maine and NOT eat lobster. It would be like going to Texas and not eating Mexican food or barbecue. Scandalous.) This came from a fun restaurant called 2 Cats just a couple of blocks from the B&B, and we went there for lunch one day. They were well-imformed on all things GF, so it was very comforting.

Another place we frequented was a cute cafe/natural grocery store called Tamarind. I saw this sign upon walking in and got so excited. Honestly, I don't eat a lot of gluten free bread-y products or baked goods, but it just makes me happy to find places that understand and accommodate, so of course I have to indulge in order to support their efforts! I had one of my first ever restaurant GF pizzas for lunch at this place.*
I'm fairly certain the reason the place is called Bar Harbor is because of this large sandbar that appears at low tide. You can actually walk out to the closest of the "Porcupine Islands" - or drive, but you only have about a three hour window to enjoy the sea life and shells there or a bit of hiking around on the island before the tide begins to come back in. A couple of cars were submerged there the week before we arrived!

Below is the other side of the harbor and sandbar. I love the low hanging clouds that perfectly line the landscape.

On Monday morning, we planned to get up at 4:30a.m. and drive to the top of Cadillac Mountain in order to see the sunrise at 5:27a.m. - one of the first U.S. locations to see the sun come up. We had been to the top the day before and even mid-afternoon on a sunny day it was cold and windy, so when Robert stuck his head out our back door in the B&B after the alarm went off and discovered that the wind was whipping here at sea level, we knew the mountain would be miserable at that hour. So, we went back to sleep for an hour and a half and then got up and drove to a lake located at the base of Cadillac Mountain called Eagle Lake. There is what's called a "carriage trail" around the lake which connects to a network or 55 miles of connected carriage trails in the interior of the park. The one around Eagle Lake was 6.2 miles which was perfect for our weekly "long run" as we are planing to run another half-marathon in October. Just a few minutes into our run it started to rain and the wind was already strong, but we kept going and ended up drenched at the end. Sounds crazy, but we actually enjoyed it. The large jacuzzi bathtub in our private bathroom was also enjoyable after a hearty breakfast back at the inn!
After we checked out on our last morning there we hiked the "Beehive." It is a very popular short, but steep hike to a beautiful peak overlooking the park and ocean. And unlike the White Mountains of New Hampshire, Acadia has provided some nice, sturdy, metal hand holds in a few places along the way without which the hike would be impossible unless you had special gear.
And then we were off and headed south to Ogunquit, ME where our kids awaited us for three more nights of Maine fun and beauty. Just a short stop on the way to purchase some wild Maine blueberries - the little tiny ones - and some fresh picked blackberries. I passed on the moose antlers this man was selling, but he had LOTS and many people browsing through them!

So blessed.
So thankful the Lord provides gifts like this for us. Praising Him for His constant provision in our lives and also for the provision of 18 years of marriage!
